Crispy Prawn Wontons

Quick Summary:

Can't stop eating these crispy prawn wontons - delicious served with creamy Japanese mayo or sweet chilli sauce or both! Makes 50.

What you will need:

800g raw prawns, peeled & deveined

2 spring onions, chopped

1 small bunch of coriander, chopped

1 red chilli, chopped

1 clove of garlic, chopped

1 thumb size piece of ginger, chopped

2 tbs light soy sauce

1 tsp sesame oil

1 tsp cornflour

¼ tsp white pepper

¼ tsp salt

2 x packets of wonton pastry (50 sheets total)


3-4 cups canola oil for deep frying

Crispy Prawn Wontons

How to make it:

Place prawns, spring onion, coriander, chilli, garlic, ginger, soy sauce, sesame oil, cornflour, salt and pepper into a food processor.

Blitz for 5-10 seconds or until combined.

Transfer mixture to a bowl.

Spoon a heaped teaspoon of mixture in the centre of a wonton pastry.

Lightly brush the edges of pastry with water.

Fold pastry in half to form a rectangle and enclose filling.

Gently bring the two inner corners together and seal with a dab of water.

Half fill a medium size pot with oil and heat to 170 degrees celsius.  Test with a thermometer if available.  If not, drop in a cube of bread - this will take 20 seconds to turn golden brown.  Oil is ready.

Fry wontons in batches until golden, then drain of kitchen paper.

Serve with sweet chilli sauce.
